Chili Con Carne
Something I love doing is cooking for groups of friends. One thing I like cooking is chili con carne. It tastes great and it’s really easy to make. Paired with a homemade guacamole, sour cream and fresh bread it’s an excellent meal for a big group.
What you’ll need:
1kg beef brisket
5 cloves garlic
2 cans tomatoes
2 cans black beans (in chili sauce if available)
1 Chili (more if wanted)
2 tsp each (ground)
Salt & Pepper to taste
Score the meat in a checkerboard pattern and rub all the spices into the meat. Cook it in a hot pan until seared on both sides. Saute the onions and capsicums with the chili. Add the garlic into a pan with a little oil, add in the tomatoes and beans, put the meat on top and cover with the onion mixture. Simmer on medium-low for at least 3 hours.
To make the guacamole, mash the avocado and tomato together to make a paste, dice the onions and mix into the paste. Add the lime juice, salt, pepper, and paprika powder to taste.
Serve the chili with bread or rice with guacamole and sour cream.
